Pork Tenderloin Wrapped in Bacon

Follow the simple Tying a Roast procedure for assembly. This is a great way to cook a pork tenderloin to keep it moist and flavorful.

INGREDIENTS: 

  • 1 each Pork Tenderloin
  • ½ pound Bacon, slices
  • 1 Tbs Paprika, Smoked Spanish
  • 1 tsp Cumin, ground
  • 2 tsp Sea Salt
  • 1 tsp Oregano, Dried
  • 1 tsp Black Pepper, Ground
  • As needed Olive Oil

METHOD:

  1. Combine the spices and salt together in a small bowl

  2. Cut the tenderloin into two even pieces and coat with the seasoning 

  3. On a clean cutting board, lay out the pieces of bacon slightly overlapping to the width of the pork pieces

  4. Cover the bacon with saran wrap and gently roll with a rolling pin to flatten and even the bacon layer out.

  5. Remove the saran wrap and place the pork tenderloin pieces in the center and gently roll the bacon over to cover

  6. Tie up the roast gently and place on the Cinder grill

  7. Using the Cinder App, set the temperature to 145°F and close the lid

  8. Once the roast reaches the desired temperature.  Remove the roast and gently clean off the Cinder grill.  Set the grill to 400° F to crisp the bacon

  9. Brush olive oil onto the roast to help prevent sticking and place on the Cinder grill and close the lid.  Allow to crisp for 3-5 minutes or until golden brown

  10. Let the roast rest for 10 minutes prior to slicing
