What are Fricos?

Parmesan crisps (or fricos, to use their Italian name) make for a visually stunning and utterly delicious upgrade to any meal. While they look impossibly lacy and intricate, cheese fricos couldn’t be easier to make on Cinder’s super-non-stick plates. These cheese crisps are perfect to add as a topping to any dish or an equally as perfect snack.

How to make fricos?

Cooking fricos is easy but requires precise cooking and temperature control to ensure the cheese melts and cooks without burning. You can top any salad or dish with broken-up fricos for added crunch or simply enjoy them on the side as a cheesy snack. Check out fricos in this Caesar Salad recipe. SERVES 4 (4 large parmesan fricos)

Ingredients

  • 1 cup parmesan

    METHOD

    1. Set your Cinder device to 375°F.

    2. Once Cinder Grill plates have come up to temperature, sprinkle a quarter of a cup of grated parmesan directly onto the grill in a thin, even circle. The cheese will begin to sizzle and, after about a minute, will be fully melted and turn golden brown.

    3. Once this occurs, switch off the device and allow to cool for an additional minute.

    4. After the cheese has cooled slightly, use a spatula to gently pry the crisp from the grill and transfer to a plate. Repeat this process twice more, until you have four crisps.
