How to caramelize onions: the old fashioned way

Typically when you caramelize onions, you slowly cook them in olive oil at a low temperature until they are richly browned. This pulls out the flavor from the simple onion and makes it sing but can take a long time spent watching your frying pan to ensure your onions don't stick, or over-brown. This method also requires periodic stirring.

The secret to browning or caramelizing onions on Cinder Grill 

On Cinder, you can use the precision cooking and nonstick surface to set and forget vegetables. Around 320°F, sliced onions will caramelize without burning, and don't require constant stirring.

YIELDS 1 CUP OF CARAMELIZED ONIONS FROM 3 LARGE ONIONS

INGREDIENTS:

  • 3 large onions (sweet variety such as vidalia)
  • Olive oil
  • Optional butter, balsamic vinegar, salt depending on how you want to flavor your onions

METHOD:

  1. Slice onion into thin strips:

  • Cut the stems off the onion and slice in half from root to tip of the onion.

  • Peel back the peels from the onions.

  • Lay the onion cut side down and cut thin slices through the onion.

  • Turn your Cinder to 310°F.

  • Liberally spread olive oil on the surface of Cinder. About 0.5 tbsp per onion. 

  • Stir the onion on Cinder Grill's surface using a wooden or plastic spoon covering the onion evenly in the oil.

  • Close the lid of Cinder and leave to cook for 25 minutes. For further caramelization leave for up to 25 more minutes.

  • Serve and enjoy!
