Autumn is the harvest season for a reason. After a long summer of converting sunshine to sugar and ripeness, fruits and vegetables are at their peak. There's no better way to highlight this delicious bounty than grilling them. Here we feature six dishes which bring grilled fruit and grilled vegetables to their absolute best using the Cinder Grill.

 

Apples For Pie and More

Our Food Guide includes directions for sauteing apples on the Cinder Grill to produce apple pie filling.  Not only do these tender caramelized apples work beautifully in apple pie, but they have near-limitless possibilities. For instance, they can also fill apple crumbles or Dutch pancakes. On the savory side, these apples combined with pitch-perfect caramelized onions can top anything from a beautiful pork chop to a crisp grilled pizza.  When apples are at their flavorful best it makes complete sense to try this versatile grilled fruit dish.

 

Peaches: Grilled Fruit With or Without Cake

Our Michelin Starred Chef Critchley created a gluten free doughnut-peach and almond cake for those of the Cinder community who can use gluten-free and gluten-reduced dishes and ideas.  Both aspects of the recipe lend themselves to variations. The grilled peaches, whether the doughnut variety or round varieties, become succulent and juicy with cooking. Try them over ice cream or beside warmly spiced chicken breasts. Also of course the cake can be filled with any grilled fruit you like, from bananas to pineapple, and studded with chocolate. The Cinder Grill lends itself surprisingly well to baking -- try it out!

 

Showstopping Acorn Squash

This stunning Whole Roasted Acorn Squash was created as a vegetarian centerpiece roast.  However, anyone who likes squash can enjoy this satisfying dish. It's rich enough to accompany lean protein such as white fish, and classy enough to stand beside roasted meat.  It even carries its own sauce! As soon as good acorn squash are available, make this grilled vegetable dish without delay.

 

Tomatoes At Their Juicy Best

Tomatoes are thought of us as summer produce but their season runs into the fall. Indeed, many of the best and brightest tomatoes come forth in the autumn. However, when heated tomatoes tend to not only tenderize but disintegrate. Give them a little support with some bread and you'll have a crisp delicious Heirloom Tomato Sandwich. Furthermore, this sandwich, like all panini, is infinitely variable. Add anything you like from cheese to a fried egg to bacon, or focus entirely on the tomatoes and let the sturdy bread soak up the juice. The choices and the tomatoes are up to you. 

 

Grilled Vegetables: Delicious Brussels Sprouts, Really!

Brussels sprouts have undergone a renaissance recently, and it's well deserved. They are capable of true deliciousness, especially in the fall and winter when a touch of chill makes them all the sweeter.  Our recipe for Roasted Brussels Sprouts  works with the Cinder Grill's strengths. The results: beautiful, browned, tender sprouts, no mushiness or sulfur smells in evidence. They're ready to play side dish to a wide range of proteins or to serve as the base for a warm nutty salad. Jewel-bright beets take us from autumn through the winter, providing nutrition and cheer through the cold months. Cook them without muss or fuss on the Cinder Grill and serve them in a refreshing Beet Salad.  When the days are dark this bright salad will cheer your eyes, your palate, and your whole system.
